Component Analysis of Proteins in Egg White

Abstract:The electrophoresis of gee white using acetylcellulose film was conducted and the electrophoretogram showed that there were at least 6 major proteins, in which 5 of isoelectric point <pH8.6, 1 of pH>8.6, and the relative contents of these proteins were 30.85%, 22.62%, 10.83%, 8.67%, 19.46% and 4.91% respectively from positive to negative pole.
