Analysis and Evaluation on Nutritional Composition in Muscle of Myospalax baileyi

Abstract:In this paper, the muscle nutrition compositions of Myospalax baileyi were analyzed and the nutrition values were evaluated. The content of water, ash, protein, coarse fat, trace elements, fatty acid, amino acid and vitamin were also determined. The results show that, in the flesh of Myospalax baileyi, proteins are highly up to 18.7%, various amino acids are included and unsaturated fatty acids accounts for 64.1% in the whole fatty acids, and Vit E content is very high. Exceptionally, Vit C (no traces in the fleshes of many other animals) and many kinds of trace elements are abundant in the fleshes of Myospalax baileyi with the characterization of high potassium content and low sodium content, which is accord to the trend of modern nutrition and health care and would have the potential to be used for resource exploitation of nutrition and health protection substances with low sodium content.
